Sharon's Eggplant Salad

Ingredients
- 2 eggplants
- 1 chopped green onion
- 2 tomatoes cut into small cubes
- 4 chopped pickeled cucumbers
- a lot of oil
- juice from one lemon
- salt
Preparation
- burn the eggplants on an old pan or other preffered method for about 20 minutes till soft and ready
- open the eggplant with a knief lengthwise, put in a collander, and let the liquids go out
- mix all the ingredients and put in a bowl
