Sharon's Eggplant Salad

Sharon says its originally from Rachel


  1. 2 eggplants
  2. 1 chopped green onion
  3. 2 tomatoes cut into small cubes
  4. 4 chopped pickeled cucumbers
  5. a lot of oil
  6. juice from one lemon
  7. salt


  1. burn the eggplants on an old pan or other preffered method for about 20 minutes till soft and ready
  2. open the eggplant with a knief lengthwise, put in a collander, and let the liquids go out
  3. mix all the ingredients and put in a bowl
